Honey Cough Syrup
Zest of two lemons (about 1 ½ T)
¼ - cup ginger (peeled and sliced) or ½ t ground ginger
1 – cup water
1 – cup honey
½ cup lemon juice
In a small saucepan, combine lemon zest, ginger and one cup of water. Bring mixture to a boil, summer for 5 minutes, then strain into a heat proof measuring cup. Rinse the saucepan out and pour 1 cup of honey into it. On low heat, warm the honey, but do not allow it to boil. Add the strained lemon ginger water and lemon juice. Stir the mixture until it combines to form a thick liquid syrup. Store in a clean glass jar with a lid.
Remember, that honey is not recommended for children less than one year old.
